Eileen Dolan was born in Berrings in County Cork in 1914. She won a one-year scholarship to a domestic economy college in Dunmanway in Cork and did a further year of study in the Munster Institute in Cork. She subsequently took a position in Coachford Creamery as a trainee butter-maker and then moved to Newmarket Creamery to train as a cheese-maker. She continued to work as head cheese-maker in Ballygarvan, County Limerick until her marriage in 1952. She and her husband subsequently moved to a cheese factory in Rathduff, County Cork and worked for a further short period before being dismissed for attempting to introduce the union into their workplace.
